This is a delicious low carb dish. Tofu is such a healthy and versatile food that I've been experimenting a lot lately with it. I added asparagus because my daughter loves them and I really liked the result. I hope we can start enjoying this high protein and delicious food more often.
Ingredients:
- 1 package firm tofu
- 3 tablespoons soy sauce (more to taste)
- 2 teaspoons toasted sesame oil
- 3 tablespoons canola or vegetable oil (you can use also light olive oil)
- 1/2 pound fresh asparagus
- 1/4 teaspoon salt
- 1/4 cup crushed peanuts (optional)
First drain the tofu and cut it in 2x2 inch pieces aprox. Arrange them flat in a board and cover with paper towels, put some weight on top and let them get as dry as possible. Transfer to a bowl and add 3 tablespoons of soy sauce and 2 teaspoons of sesame oil. Let them marinate while you prepare the asparagus. Take the fresh asparagus and trim the tough ends (usually about 2 inches), with a potato peeler "peel" the bottom half and then cut them in two inches pieces . Heat the oil and carefully sauteed the tofu until golden brown, saving the leftover soy sauce. Remove from heath and place in paper towels. Sauteed the asparagus until crisp or "al dente" sprinkling them with the salt, do not overcook. Transfer the tofu to the pan and add the reserved soy sauce and sesame oil, plus more soy sauce to taste. Served sprinkled with the peanuts. Enjoy

Mirthica me recomendo tu blog y me encanta! He estado buscando recetas con tofu porque le he agarrado el gusto pero no lo se preparar, asi que voy a probar esta.
