My husband's favorite breakfast is Granola and yogurt, so yesterday I decided to try to make my own Granola. I feel I can improve it, but this first try is pretty good. I will keep you posted on any advances!
- 1/4 cup canola oil
- 1/4 cup honey
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- 2 cups old-fashioned oats
- 1/2 cup pecans
- 1/2 cup cashews
- 2 tablespoons sesame seeds
- 1/2 cup ground flax seeds
- 1/4 cup dry milk powder
- 1/2 teaspoon cinnamon
Preheat oven to 275°. In a microwave resistant bowl mix the oil, honey and maple syrup and heat for 1 minute (in the microwave), mix and stir the vanilla. In another bowl mix the rest of the ingredients, and toss with the honey mixture. Spread the mixture into a nonstick baking tray. Bake for 18 minutes, then remove the pans from the oven and stir. Spread the cereal again and bake for 15 minutes more, until golden brown. Cool completely. At this point you can add 1/2 cup of any dry fruits like raisins, cranberries or blueberries. Store in an airtight container. You can also substitute the cashews and pecans for any nut you like (almonds, walnuts).
