My friend Maria Josefina introduced me to this kind of lentils, they are small and black (almost like caviar). They cook very fast (only 20 minutes!) and they do not need to be soaked. It's a great "fast food" dinner, and very nutritious too. If you are in a low carb groove, this is a perfect meal.
- 1 cup dry black lentils
- 1 roma tomato, chopped
- 3 scallions, chopped
- 1 small garlic clove, crushed
- 1/4 red bell pepper, chopped
- 1/3 cup parsley, chopped
- juice of 1 lime
- 2 tablespoon olive oil
- 1/8 teaspoon ground cinnamon
- salt and pepper to taste
Cook the lentils in boiling water for 20 minutes or until "al dente". Do not over cook them!. Drain and run them through cool water. Transfer to a bowl, and add the rest of the ingredients. Let it rest for 10 minutes and enjoy!

Roselena made this salad during the weekend for a picnic among girls scout families. Wow! It is so tasty! I highly recommend it. It is delicious, nutricious and easy to take with you. Our five-year-old daughter liked it too!
